Fully Loaded Taco Salad

INGREDIENTS:

  • 2 tablespoons olive oil
  • 1 pound ground beef (I used 90% lean, can substitute for ground turkey)
  • 1 packet taco seasoning (I used reduced sodium, medium heat)
  • 1/4 cup water
  • 1 tablespoon ketchup 
  • 1 tablespoon hot sauce (I used tapatio)
  • 1 half red cabbage shredded
  • Handful chopped or torn cilantro 
  • 4 cups romaine lettuce
  • 1 or 2 medium tomatoes, diced (I used Roma, vine-ripened or cherry tomatoes may be substituted)
  • 1 medium ripe Hass avocado, peeled and diced
  • 1 green and 1 red bell pepper cut into strips 
  • 1 red onion cut into slices 
  • 1 cup reduced fat Mexican shredded cheese blend or cotija 
  • 4 corn tortillas cut into strips (can also use whole wheat or remove altogether for less carbs)
  • 3/4 cup corn (I used canned, fresh or frozen may be substituted)
  • 1 small can black beans, drained and rinsed
  • 1/4 cup sour cream (lite okay, plain Greek yogurt may be substituted)
  • 3 to 4 tablespoons lime juice, or as necessary for flavor

 

  • To a large skillet, add the olive oil, beef, and brown over medium-high heat, breaking up beef and stirring frequently for even cooking.
  • After beef has browned, optionally drain it (I didn’t need to) sprinkle with taco seasoning, add 1/4 cup water, ketchup, hot sauce and simmer over medium heat for about 3 to 4 minutes, or until sauce has thickened some. Add can of black beans cook additional 1-2 minutes. Allow beef to rest in pan off the heat while you assemble the salad.
  • In a small separate pan sauté the bell peppers and onion in a little olive oil and touch of salt till soft and slightly caramelized. Remove from pan and set aside.
  • In the same pan sauté the corn in a little bit of olive oil until it has a nice char. Set aside.
  • In another small separate pan add a few tablespoons of canola or vegetable oil and fry tortilla strips till crispy. Place on paper towel to remove excess oil and sprinkle with salt.
  • To a large platter or bowl, add the chopped lettuce, red cabbage, bell peppers and onion, corn, beef and beans. Top with cilantro, tomatoes, cheese, sour cream, avocado and crispy tortilla strips. Enjoy!
